Here are the ingredients:
Serves Four
10g carb per serving
1½ lbs / 700 g courgettes/zucchini
½ teaspoon salt
3 oz. / 90 g butter
6 oz. / 175 g mushrooms, finely chopped
6 oz. / 175 g cream cheese
6 oz. / 175 g grated/shredded cheese
½ green bell pepper, finely chopped
3 oz. / 75 g air-dried chorizo
1 egg
1 teaspoon onion powder
2 tablespoons fresh parsley, chopped
½ teaspoon salt
¼ teaspoon pepper
1 cup / 240 ml mayonnaise or herb butter, for serving
2 oz. / 50 g leafy greens, for serving

Feel free to try this recipe with different cheeses for different flavours.
You can also make this dish with aubergine/ eggplant instead of courgette/zucchini.
